Ageing


Our organic Cognacs are aged in oak barrels from « Limousin » forest. The new casks are filled with young « eau-de-vie » for least twelve months. After that the Cognacs keep on ageing in old barrels.

New barrels contribute to color the future Cognacs, provides them wood tannins and vanilla aromas whereas old barrels bring fine and spices flavours.

As Distillerie du Peyrat is located along a small river, our ageing process benefits from humid conditions. That allows us to improve the quality of our organic Cognacs year after year.
